I'm trying to find statistics to determine what are respectable percentages for strikers for shots per game, shots on goal, goals per game, % of goals vs. shots, etc... Any ideas?

It's probably easier and more likely to find results if you search for the stats of each striker you want this information on individually.

If I was a captious person, I would say that if you never actually take the shot then how can it have been a shot? :D

Good, but how often do we see a player having a clear shot on goal, but never actually take the shot?
Is then not called a shot, rather a missed opportunity?

Missed opportunity - if a shot isn't taken, then logically it can't be a shot. :)
